Let Us Talk 'Exotic' - Coloured Cauliflower

I thought this was the best place for this posting as this is not your normal cauliflower! I found these beauties around the Christmas season in 2011 when all the kind of more odd, weird and exotic type foods come out to temp the eye of the near-by shopper into their wonders.


Well these did just that for me. I know that cauliflower is just a good for you as almost any other kind of veggie and fruit. They are high in vit C and manganese, they even contain Omega-3 fatty acids! (new fact to me!). They are also a great source to lots of B class vits! But with that said, remember the golden rule in food and eating... everything in moderation. They say to limit your intake of this veggie to not more then 4 or 5 servings a week as it has purines which are broken down by the body making uric acid which with too much can in turn lead to getting gout.



With that said, look at these beauties! Purple and Orange Cauliflower! I LOVED purple and just feel for these the instant I found them! Don't worry about too much about how to cook them as there are LOTS of ways to cook cauliflower from roasting to sauteing to even just boiling or steaming it. I personally like the roasting and steaming methods best but I also like to mash it and make kind of a mock potato pancake type dish (again will post recipes I'm sure).


The colour on these beauties aren't just skin deep either, it runs all the way through. Perhaps not as deep as the colour on it's outside but it just looks so pretty when cut up and ready for cooking. I boiled mine at this time and I have to give you one small piece of advice, if you boil these kind of cauliflowers, so them separate! Especially if you have a purple one in there! The colour DOES bleed into the water and thus my orange coloured on turned a really weird colour. That is a reason I didn't post a recipe or anything with these... just sharing some more exotic stuffs with you all! I mean what is better for a gluten free diet then going to the basic things that are naturally gluten free?! 


General Talk - The Day Of A House Wife

What is there really to be said about being a house wife. In it's way there are lots of benefits such as keeping almost any hours I want to being able to go about my daily life mostly as I wish to but there are also down sides of it such as knowing that I MUST do certain things by a certain time such as dishes and cleaning. That there are going to be tough days just as there are going to be very easy days. There are going to be times where my wonderful husband is not always that wonderful just as there are going to be times where I'm in such a bad mood that any one best keep a 4 block distance from me.

Would I change the life I have? I will honestly say yes... but not really in ways I think you would expect. The first of these changes is that I don't want to simply be *just* a house wife. I changed this at the end of 2011 and now work for a wonderful Mom & Pop run business (even though they are only about my age to be honest!) as someone they can rely on when they need someone to come in at a drop of a hat (a lot of people don't have this luxury in their real lives) when someone falls ill or the business is just so busy they need an extra hand not to mention some more stable hours that I will receive well soon I would suspect... as soon as the weather becomes a bit more stable.

What else do I want to change? I want to move and we're working on that too. Well I'm not the only one that wants to move, my husband wants to as well but it's me that really has to work on this one as it'll be some where between 4000 and 5000 euros to move with. We want to move into a house, villa or bungalow. Something NOT attached to another building or other apartments as we are now. Some where perhaps just on the outside of the city where rent is a better deal and the area is quiet. We moved where we are now almost 10years ago but at that time the area besides the street was quiet. There was a baker next door, a fish monger in the shop that is part of this apartment building (not to mention they were the owners of the building!), there were no apartments next door and my mother-in-law, even as annoying as she was, lived under us. Now a days there is a dance cafe next door where the baker use to be, there have been at least 5 different shops that have come in and out of the shop in this building, mostly turkish, from butchers to bakers and to now a what seems to have died cleaning business.

I want to move into a place that has a backyard where there is a place for me to dig up and make a veggie garden out of. I want to plant and grown my own carrots, zucchinis, radishes, tomatoes and more if I can. I don't know if I have a green thumb or not as I never have had a chance but if I have one at all, I want at least that chance to find out. If it doesn't work, I will simply re-plant the area with grass seeds or put down sow... but I want at least the chance to do that!

And really the last thing I wish to change is to have a car again. I loved driving when I was in the states, just for the sake of driving but now a days I simply need a car. I should say I feel I need a car. My husband would gladly disagree because it's another expense but he isn't home experiencing my every day life where a car would save a LOT of time that goes wasted right now on waiting for buses or other transportation and it would allow me to go out to places farther away that I don't go now because I don't like long bus rides. Such as the fact that my laptop needs to be repaired because the hard drive is failing but the place I would like to get it done is a 30min bus ride away both directions... by car I can do it 30mins total and at my own pace/direction.

Among all of this... they are not things like wanting better/bigger things. They are simply changes that I wish to make. I hope along with the move though that I end up with a bigger kitchen. Right now it's so small that hubby and I can't work in it together unless it is 100% clean, dishes are totally put away and there is nothing at all on the counters. Otherwise it's him looking on from a chair in the living room. I also want some more well luxury items to me at least, perhaps some would see them as needed items, but simply I want a dish washer, a washing machine and dryer and this seems odd but I want a kitchen sink with a sprayer and garbage disposal! Yea odd I know but still, they are things I feel would make my life easier in the kitchen that I must spend my time in for even the sake of my health.

So here is a photo of one of the small corners of my kitchen. You might get to understand why I believe that it would be nice to have a bigger kitchen. The photo below is just the left side of the counter space I have. It is between a wall, recessed into a storage room area and has my stove/over on the right of it. The rest of the kitchen is kind of like this as well. The right hand side of my stove is the home of my microwave (cabinets are too low to hook the micro on it to open the counter I'm sad to say) and just next to that going to the other wall houses other counter top things like a couple of rolling pins and a mini deep fryer (used by the hubby for those few little items that aren't gluten free that he still likes to have). It then turns a corner where I have a bit of a bigger open area of counter top then it goes into my sink. I love my sink because it's a big double sided sink with an additional metal sheet to the right to put a dish drainer on. Then a bit more of an open counter where we do most of our prep work. All in all, it's not a 'bad' kitchen but it is rather small and lacking in counter space.

My dream kitchen is to have one of those new flat stove tops built into an island counter in the middle of my kitchen with enough room around it for say my husband to sit with a news paper to keep me company or even to help with some prep work like slicing apples or peeling potatoes. That to be had with an oven built into the cabinets some where at body height rather then having to bend over all the time to get to the floor style ones. Will this happen? I doubt it but a women can dream can't she??

Anyhow, this is my life right now. These are the things I wish I could change. Some will change, some will always be dreams. What does YOUR most used spot in your kitchen look like??


The left side of my kitchen. It recesses into the wall, cabinets line the top, wall to the left with places to hand my aprons, oven mitts and kitchen towels (trash can is some where against that wall too) while as you can just make out a frying pan on the stove top to the right of the photos.

In this corner 99.9% of the time houses a basket that has an assortment of tea along with misc frying pan/kettle lids (back far corner), in some shape or form there are eggs (in this case it was from a 30 count cause I was baking/cooking so much), next to that just almost hidden will be a load of (ewwww) gluten filled bread for my husband (you can just see the peek of a white plastic bag which holds fresh baked bread along with a multi coloured plastic of a pre-made bread for back up times). From the middle to the right house my most used cooking items... spices (almost all grinders of some sort... black pepper (2 kinds in this photo), rock salt and sea salt, seaweed mix, 3 or 4 pepper mix, garlic pepper, lime pepper (really good on fish!), normal table salt, olive oil, garlic oil (yes I LOVE garlic!), box of corn starch and last but certainly not least a bottle of Tamari sauce (gluten free style soy sauce... remember normal soy sauce DOES have gluten in it!). There is also from time to time a bottle of Sherry sitting there (the dark wine bottle looking thing) because I use it in egg foo young (will post a recipe sometime I'm sure) along with the gravy to go with it.

Oh and lets not forget the big huge 1 litre plastic containers that line the middle of this photo. These are my top 5 most used spices! Oregano, Basil, Garlic, Chicken Seasoning Mix and Cinnamon. There also happens to be another of these litre container in the left most cabinet (just barely seen in this image) that contains parsley as well as I add it to a lot of soups. Never mind the apples in this corner though, these are not a regular here, I just happen to be preparing for some sort of dessert so that was the best place to put them for storing for the moment!

Recipe - Creamy Garlic Potato Soup - Version #2

This post had been started well over 2 months ago and all that I wrote is very much in the past now. So much in the past that it originally mentioned about how I had gotten an unexpected call while out trying to do some grocery shopping from my 'new employer' which I was hired at on the *VERY* last day of 2011. That was about 3days into being told 'your hours might not start until March sometime when business hours are longer and we get busier'. Well needless to say I've put in more hours in the last couple of months then I think any one expected and I've been LOVING it!

The only real things I regret is that I haven't been here nearly as much as I want or need to be and that I don't/haven't been cooking properly or as often. I hope to change that a bit. There have been signs in the air of spring coming from hearing my wonderful birds chirping around 5am in the morning on the nice days to the other afternoon having a wonderful snooze next to my husband in the middle of the afternoon, waking to being comfortably warm and then a bit later hearing the wonderfully familiar sound of the local ice cream truck coming out of hibernation. Ok weird signs to some people... most look for the first sign of blooms on the trees or the familiar 'I saw my first robin today!' type thing but for me the above tell me that it's going to be spring soon and I can't WAIT! I miss my spring/summer fruits and veggies and well I'll admit it, the prices that come with them.

Today has taken my spring feeling away though. Although it's not bad temperature wise, it has been raining pretty heavy since I'd say about 5am. It sounded wonderful though, so wonderful that I slept until almost 10:30am which is very rare for me lately!

With the weather what it is today lets get onto the soup.... now this soup is another version of my Creamy Garlic Potato Soup Version #1. I don't have end results as I'm sure from the link above you can get the idea from it, there are 2 differences to this one though and that is it has no chunks of potatoes (although you can just as well do that too if you wanted it!) and it uses elephant garlic cloves instead of cheating with garlic puree.

Ingredients
 4 to 6 large starchy potatoes, skinned and cut into small chunks
 4 cups water (give or take a bit, this isn't rocket science)
 2 chicken broth cubes
 2 tbs olive oil
 1 small onion, finely chopped
 2 cloves elephant garlic or 5 cloves regular garlic, roughly chopped
 1 cup light/low fat milk
 1/2 cup cheddar cheese, shredded
 plenty of fresh cracked pepper

Directions


As said this is not rocket science, make sure your potatoes are cut into about 1/2inch pieces. Boil them in plain water until really soft. Strain and set aside.


In the pan that you just boiled the potatoes, take some paper towels to it and dry it a bit. Put it back on the burner and add about 2tbs olive oil. Add onion and garlic and saute until translucent and soft.


Add the milk and add water until you have your pot about 2/3rd full. I'm using a 3 quart/litre pot for this. Add the 2 chicken broth cubes and bring to a light boil... basically hot enough to melt the cubes. Add the reserved potatoes to the pot CAREFULLY! The potatoes will make the liquid splash. To prevent this, spoon the potatoes in and I do mean actually spoon them in. Take an over sized spoon like one you would serve with, grab a good spoonful of potatoes and dip the spoon with the potatoes into the mixture. I learned the hard way that trying to just dump the potatoes in at this stage just hurts as the mixture is very hot by now and the milk is even hotter.



Add potatoes but remember to leave a bit of room so that you can puree without over flowing your pot and enough room to add the cheddar cheese while still being able to stir. Once the potatoes have regained their heat which won't take too long, remove from heat and simply take a stick blender (or if you don't have one, use a normal blender and do the mixture half at a time) to it until there are no potato chunks left.


Return to a very low heat, add the cheddar cheese and pepper (add pepper to taste but I would suggest quite a bit since your trying to bring the pepper taste out over the garlic, potatoes and milk which all mellow out pepper taste quite a bit). Use a spoon to stir the cheese in until well melted.



Serve in mugs. This is a perfect grab a cup, sit on the couch with your favourite blanket and your book or TV and just sip away. And there you go. A nice rich, creamy, garlic potatoes soup that takes not a whole lot longer then it takes to boil the potatoes themselves while saving you from all the crap that pre-made soups have in them.


I'll get ending photos of this one when I make it again, which I don't think will be too far away if this weather keeps up!

Tip - My first photo shows a dish of sour cream. You can add a couple tbs at the end after melting the cheddar in for a bit richer texture/taste.

General Talk - Sadly Neglecting

I have to admit, I have not been on-line nearly as much since my surgery in November and through the better part of this year already and have even gotten a couple of readers asking me when I'm going to post something new in my recipes.

Truth be told, there are a lot of real life things going on right now that have just been more important and so very time consuming that I just haven't had the time to get here. The winter was rather mild with exception of about 3weeks worth of 'really' cold weather which consists of about 20 to 25f or something in the range of -5 to -10c. Not terribly bad considering I'm a Wisconsin gal but still it gets to me. It makes me irritable and grumpy not to mention when I'm in a bad mood, the last thing I want to be doing is dealing with my kitchen nor the mess I would make trying to create/try recipes.

On top of that streak, I also took on a real life job that although wasn't suppose to be totally solid in hours they expect until March, I've put in 2 or 3 days almost every week since I was hired. I LOVE the hours, the job and the people I work for but what is more troublesome is the fact that there is now something wrong with my right foot. I am ok it seems while IN my shoes but once at rest, with or without shoes on, the right side of my right foot some where between my little toe and the one next to it is a very sharp pain that only is noticeable if I bump, pull or try to weight bare on top of the foot (such as last night when I needed to move the heavy winter blanket while I slept to get comfortable and did it with the top of my foot... ooo that HURT!).

And if that wasn't bad enough, for years now we have had a problem with our hot water boiler for our hot water supple for the day. It's a storage tank which works on a heat at night when electric is at it's lowest cost and store it for the day time use. Well, there is a 3 loop heating element that doesn't even sit in the water itself but in a kind of cylinder that sits in the water so never touching water. It's been replaced at least 3 times in the 10years we've lived here and it's on the way to having to be repaired for a 4th. I can at least be thankful that it doesn't give up all at once but instead that it breaks one of the 3 elements at a time. I can tell each time one of the elements breaks because the amount I can do with hot water becomes less and less. Like now, I know I'm on the last of the 3 elements as of the cold weather spell we had because my wonderful husband who has a faithful wake up shower every morning can have his very low water usage shower and I can do *1* sink worth of dishes before I run out of hot water. I now have to run my boiler's force function any time I think I might want to cook/bake or clean this place and that really put a damper on my want again to cook because it's always a struggle to keep my kitchen clean, the apartment clean and make sure that *I* feel clean when I am always fighting for every last ounce of hot water I can get.

If the machine is working the way it is, I can get by.. it's a small tank of like 50litres.. maybe 75 at MOST so it's not really fit for even 2 people but at least there is hot water. And when it working right, it should heat that tank of water from cold to scolding hot within 3hrs. When the elements start to break that time goes to something around 5hrs with the first break and then about 6-7hrs with the 2nd break.... the 3rd break and we're screwed basically.

So to all those that are watching my blog, I promise you I will find my drive again soon, start baking/cooking and exploring my kitchen (as well as all my wonderful birthday/christmas presents!) and get to posting about them again. I am sorry I have been absent but I hope this explains why. It's just simply a pain in the butt when you have every thing working against you from real life work, to things not working right that help with your love of cooking to being in pain with almost every step even if it's in a small square of your kitchen. I am due to see my foot doctor again a week from this Tuesday (that would be the 5th of March) after having x-rays taken. I hope he can tell me what is wrong or at least give me some relief other then trying to put me on drozy/stomach upsetting pain killers. I don't want to lose my job do to pain or any thing, I do actually love the job and I would be heart broken if I lost it.

Oh that reminds me, I'll be posting about it sometime rather soon as since *I* work there, I can offer people 100% promised gluten free food at least in salad form that is without ANY cross contamination of gluten products and that being said that I work in a sandwich shop! More to come on that when I can get out on a nice sunny day with my camera to get some wonderful photos of the place.

General Talk - Soup Home-Made vs Store Bought

Hello all you wonderful gluten free blog readers out there. Remember if you like my blogs and use the Stumble! feature to hit that thumbs up button!

I know it's been a while since I was here but remember this is a long term blog and holidays are not a time I can sit here to write but now the holidays are over and I'm back to doing the daily life.

I thought this was the perfect place to start with the weather the way it is. I don't know how it is in the USA any more but if what we have here in Belgium and what memories I have left of the old fashioned 'canned soups' thing going on when I was there last, I thought this was a good subject to talk about.

I took a trip the store last night and man was the weather pure crap. High winds (gusts to 70mph) and the rain with it made it 100x's worse because that stuff HURTS! So, safe inside the store's walls, I find myself searching for inspiration for making soup. This of course started with a trip through the aisle that has the pre-made soups. My god, what is our world doing to us?? All the canned soups have so much crap in them to preserve that it's not funny not to mention the chances of gluten contamination is just way too hight. So the next stop was looking at the pre-made 'boxed' soups. These are boxes of soup that are not condensed, ready to just pour into a pot, warm and eat. Ok sounds great but if you step back for a moment and really think about what that means. How do they make it last for so long on the store shelves?? Preservatives! And you better believe LOTS of them! If you pick up a package such as soup and it has more then just every day ingredients like broth of one sort or another, flour or other thickening agents, veggies or possibly fruit (for some of those rare ones), then it's NOT worth buying! Not to mention again that the chances that the soup you buy might have gluten some how.

A recent story that falls in this that I need to share. I was delighted to find a soup that included small meatballs that I've become fond of out here but can't have 99% now because they all have gluten based products to bind them. Ok so great, I re-read the ingredients and warnings like 10x's by now and almost squeal with excitement. I bought a 3pack (HUGE mistake on my part... NEVER buy in bulk until you know for SURE things are ok). I got home with my goodie and the first thing that I did when I could was pure a box into a pot, heat it and eat it! I was in heaven until about 2hrs later that I noticed 'crap, I'm burping this flavour and my stomach is still feeling full/bloated). This for me is a sure sign that there IS gluten in something. In fact one of the key signs that it has gluten for me is that I burp the flavour of what ever it is that had it. *sigh* Shit, another contamination and to a product that doesn't even warn of it.

So my husband, being that it's a Belgian company, wrote them for me and asked about gluten contamination in this soup and the reply from the company roughly translated that they made all their soups on the same line with the none-gluten based ones at the beginning of the week and the others later in the week, wash down and the week starts over. Ok.... like IDIOTS! That is 'made in a factory that process gluten based products'! I should of seen if I could do something about forcing them into putting a warning on their products of gluten since they process chicken soup with pasta and other soups with pasta in them which include gluten sources. Anyhow, since then I have given up 100% on buying or even looking at 'pre-made' soups and go to making my own. I discomfort *I* personally get when I get into gluten is not worth it not to mention again having my hopes of something 'new' getting burned.

Ok with that brief little story out of the way, I went and finally decided on a cream zuchinni soup... it involves *4* items... zuchinni, Alpro light soja cream, chicken broth cubes and water... yep that's it. I calculated that with the expense of adding the expensive light soya cream (at about 1.50euro a block and I needed 2 for this recipe) that I made a 5quart soup pot last night for about 7euro. The zuchinni, of which I bought 6 mediumish sized, cost me about 3.50euro, the 2 blocks of cream coming in at another 3euro and add a tiny bit more for the 4 chicken broth cubes and the water I used (which is always on stock at my house!). The prices for *1* quart of 'pre-made boxed soup' when it came to any kind of creams or cheese being added to the base of it cost in the range of 3.50euro. Even the non-cheese type ones such as tomato in this kind of soup cost a minimum of 2.50. I mean come on, how hard is it to make tomato soup?? Even my zuchinni soup could be made for half the cost if you can buy light cream that isn't soja based. I know the USA has a lot more 'low fat' or 'fat free' items that we don't have access to yet here in Belgium.

So think about it.... make soup 10x's cheaper at home that involves a bit more patiences of about 20mins to be honest to chop some veggies or even now a days you can find fresh cut veggies for you already for this purpose so exclude the chopping process and let them boil oh and like 2mins to puree the mixture in some cases or buy this salt and preservative loaded box of what I'd like to now refer to as crap.

Soups can be made so easily and so quickly, why waste your time even looking at the soup aisle? Go to your fresh veggie aisle instead and let your imagination run! Wild mushroom soup, cream zuchinni soup, fresh tomato soup, veggie soup, cream mushroom soup with wild rice for a heartier soup, chicken with gluten free vermicelli pasta and loaded with fresh veggies, shrimp bisque for something quick but extravagant. The thoughts are endless. I'll be posting my next recipe on a wonderful potato garlic soup that I make that is not only good for you but can be low fat on top of it all!

Last Birthday Present

Since I'm around the computer any how, I thought I'd come here and let you all know what this special last birthday present I got my parents was.

I had hoped to of used it by now, done a 'I got this' type post and then make a post about how to use it, make things with it and perhaps even a recipe or 2 to go with it from trial/error with it but sadly the day yet to come but I hope it comes soon! Perhaps I'll make some for over the Christmas/New Year holiday... hubby always has that entire week off.

Anyhow, my wonderful parents... my mother especially really does listen to a lot of my rambling and babbling when we're out shopping or just bumping around. This year they saved and saved and manage to buy me that very very much wanted pasta maker! Yes you heard it, although I thought it'd easily be next year at the earliest that I'd get it, I got it for my birthday!

Sadly though as I said it has still sat mostly in it's box since that time :( Due to the current surgery and then all the end of the year stuffs, I just haven't had the time to give to experimenting with it yet. Soon though! VEEERRRRY soon! I did get to making a bolognese sauce recipe though when I had intended to try the machine out but ran out of energy and want for cooking by the time I made a 4 quart soup pot of the sauce LOL. Next time I'll make sure it's not 2pounds of meat and lots of other things.

Anyhow, my new pasta maker. Only thing I am missing now is that I want *1* additional attachment to it and that is one that will help me make gnocchi and a few other types of pasta and I need some mineral oil for maintenance on it. But over all it looks like a VERY good machine and I very much look forward to experimenting with it!





And yes every one... it is actually imported from Italy! There are *some* advantages of being located in the EU... some really nice imports happen to be one and a very loving and dear family happen to another!

Recipe - Cream Seafood & Corn Chowder

I have to admit I started writing this entry about 2weeks ago, it really never seems to amaze me how fast time flies. The first part of the post doesn't even follow a time line any more so I just deleted about an hour worth of typing I had done! Oh well... today is another day and another recipe. I'm sorry to all that are watching my blog that I haven't been here posting but I will try to be here more often and perhaps I'll even be able to bring you new photos/posts while I'm on the go as I also just got a new little 'toy' yesterday and that is a new cell phone... the Samsung Galaxy Y s5360... ok ok specifics but basically it's a smart phone with Android which is needed to run stuff flash based. It is also run/own by Google itself so I can even blog from it with patience.


For today I have this wonderful recipe that I also made for the time my husband had off for his birthday in late October. With all the wonderful seafood that I had bought for the Posh Fish Pie at that time too, I had lots of fresh crab meat left and decided on a soup that looked rather yummy and the end result was really nice... creamy crab and corn chowder... a perfect soup for a small starter or even with a nice piece of salmon next to it as a main dish! This recipe didn't make *huge* amounts or anything but since I made this with our meal instead of as our meal, I had enough left over to send a nice helping with my parents when they came to visit the next day... they liked it too!

Ingredients
 1 small onion, finally chopped
 1 clove garlic, finally chopped
 2 medium sized potatoes, peeled and cut into small pieces
 ♥ 1 red pepper, seeds removed and cut into small pieces
 ♥ 2 1/2 cups chicken stock
 2 1/2 cups low fat or skim milk
 1 cup canned corn or around 2 ears of fresh corn cut from it's stalk
 2 tbs fresh parsley, finally chopped or 1 tbs dried

Directions
This soup is actually rather easy to make I think. Actually most soups I've made are pretty easy I think. Start off by making sure your potatoes and bell pepper are chopped into small pieces. Place in a 2 quart pan and add the 2 1/2 cups chicken stock. I usually end up using that amount of water and adding stock cubes instead.


Once the bell pepper is tender and the potatoes cooked through, remove half the mixture to another bowl and set aside for a moment. The other half that should still be in your pot, you need to puree either with a stick blender or if you don't have one, a standing blender will do just as well.


Pour reserved mixture back into puree'd mixture and stir. Bring back to a low simmer and add the milk, crab and corn. When warmed through, add parsley and serve.



It's a wonderful soup if you like crab. The stuff I had was a bit too fine for this dish though so it kind of got lost texture wise so if you can get chunked crab meat then do so, it'll be well worth the cost to have bigger pieces. You could of course also choose to buy fresh crab and do it that style. I do plan to show you how to boil crab and lobsters at some point in my blogging future!
